Cauliflower Ceviche

Ingredients
- 1 head of cauliflower, cleaned and stems removed
- 1/2 red onion, diced finely
- 2 roma tomatoes, diced
- 1/2 cup cilantro, chopped
- 1/2 cup lemon juice, about 3 lemons
- salt to taste
- oven baked tostadas, for serving
- 1/2 cucumber, sliced
- 1 avocado, sliced
- salsa or hot sauce, for serving
Directions
- Bring a large pot of salted water to a boil. Once boiling, add the head of cauliflower and cook for 5 minutes. Remove from pot and cool in ice water. Pat dry.
- Grate the cauliflower against the large holes of a cheese grater. Transfer the cauliflower to a large bowl.
- Add the red onion, tomatoes, cilantro, and lemon juice. Mix well and season with salt to taste.
- Serve the cauliflower ceviche over tostadas and top with cucumber, avocado, and salsa.
